To get you inspired, I’ve rounded up my favorite simple, fresh, healthy real food fall slow cooker recipes.

Just like my spring, winter and summer crockpot collections – this roundup is filled with simple, vibrant recipes that use the best seasonal produce (and they’re a breeze to throw together!).

Note: Some of the recipes may say “instant pot” in the title, but the recipe cards contain slow cooker instructions too!

What Makes These Recipes Healthy

The truth is, there isn’t a universally agreed upon definition of what makes a recipe healthy.

As an expert on healthy habits, I should know — I’ve interviewed over 200 health and wellness experts on the question of what it really means to be healthy, and have yet to uncover a definition of healthy eating that all experts agree on.

However, I did write the book on what it really means to be healthy, and when it comes to recipes I take a whole, real foods, research-based approach.

With that in mind, all of these recipes are made with whole food ingredients, without any added refined sugar, and do not include processed ingredients or oils.

They are also plant-forward, include whole grains, as well as plenty of colorful, health-filled veggies.

Finally, as a healthy habits expert, I know that a big part of eating healthy is making the process easy.

That’s why all these recipes are not only filled with good-for-you ingredients, but also incredibly simple to prepare.

How to Freeze and Store Leftovers

All of these slow cooker recipes will keep well in the fridge for up to 3-4 days, in a sealed container.

Rich, warming and creamy (without a drop of cream) Slow Cooker Tuscan Pumpkin Soup is an easy crockpot recipe that's bound to become a weeknight staple. Plus 40+ more fall slow cooker recipes that'll help you make the most of the season!

Ingredients

  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, coarsely chopped
  • 2 15-ounce cans pumpkin puree , (not pumpkin pie filling)
  • 1 15-ounce can tomato sauce
  • 2 teaspoons honey or maple syrup, optional, omit for Whole30
  • 2 cups chicken or vegetable stock
  • ¼ teaspoon cinnamon
  • 1 ½ teaspoon kosher salt
  • ½ cup full-fat coconut milk, from a can
  • 2 tablespoons chopped fresh rosemary, optional
  • 1 tablespoon chopped fresh sage, optional
  • Freshly ground pepper and salt to taste

Instructions 

  • Add the onion, garlic, pumpkin puree, tomato sauce, honey, (if using), stock, cinnamon, and salt to a 6 qt slow cooker, stirring to combine.
  • Cover and cook on high for 4-5 hours or low for 6-8, or until the onion is very tender.
  • Uncover and add the coconut milk. Using an immersion blender, blend until very smooth. Alternatively, working in batches, carefully ladle the soup into a blender and blend on high until smooth.
  • Add the rosemary and sage, stirring to combine. Taste and add additional salt and pepper to taste.

Notes

The sage and rosemary add freshness and depth to this recipe, but if you can’t find them or they’re not within your budget, feel free to skip them.
