This is one of those low-effort, high-reward dinners I keep on rotation – especially on the busiest weeks when I still want something wholesome and filling. It’s cozy, flavorful, and comes together in the slow cooker with minimal prep and tons of versatility.

Now, sweet potatoes and ground beef might sound simple – and that’s exactly the point! The homemade taco seasoning adds a smoky depth, the beef gets tender and flavorful as it simmers, and the sweet potatoes hold their shape while soaking up all that goodness. Pile it into a bowl with cool cottage cheese, creamy avocado, and a drizzle of sweet hot honey, and you’ve got a feel-good dinner with layers of texture and flavor.

The inspiration for this recipe actually came from the viral TikTok ground beef and sweet potato recipe with cottage cheese and hot honey. I wanted to put my own spin on the easy recipe by making it in the slow cooker, so that it’s both hands-off and perfect for meal prep.

And the best part of this recipe is that it makes a delicious bowl that’s hearty but not heavy. Plus it’s protein-packed, thanks to the savory beef and creamy cottage cheese, and naturally gluten-free and grain-free too!

Slow Cooker Ground Beef & Sweet Potatoes

These easy slow cooker ground beef and sweet potato bowls are loaded with protein & flavor, thanks to homemade taco seasoning, creamy cottage cheese, and fresh avocado. Just 10 minutes of quick prep creates a hearty, effortless weeknight dinner!

Ingredients

For the Homemade Taco Seasoning

  • 2 teaspoons granulated garlic
  • 2 teaspoons onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon mild chili powder

For the Beef & Sweet Potatoes

  • 5 teaspoons olive oil, divided
  • 2 pounds lean ground beef
  • 2 pounds sweet potatoes, ½-inch diced (about 6-8 cups, no need to peel)
  • ½ cup chicken stock

For the Bowls

  • 2 cups low-fat cottage cheese
  • 2 Tablespoons hot honey, or more to taste
  • 1 avocado, diced
  • 2 green onions, thinly sliced

Equipment

Instructions 

  • Make the taco seasoning by mixing together the granulated garlic, onion powder, salt, smoked paprika, and chili powder in a small bowl.
  • Make the meat by heating a large flat-bottom skillet over medium-high heat. Add 2 teaspoons of the olive oil along with the ground beef, breaking apart with the back of a wooden spoon. Sprinkle with half (about 4 teaspoons) of the taco seasoning. Cook until browned and no longer pink, about 5-7 minutes.
  • While the meat is cooking, add the diced sweet potatoes to a large bowl. Drizzle with 3 teaspoons of olive oil, sprinkle with the remaining taco seasoning (about 4 teaspoons), and toss to evenly coat.
  • Add the meat to a 6-quart slow cooker, then pour over the chicken stock. Layer the sweet potatoes evenly on top. Cover and cook on high for 2-4 hours, or low for 4-6 hours, or until the sweet potatoes are tender but not mushy.
  • To serve, add ⅓ cup of cottage cheese and ⅙ of the diced avocado to a shallow bowl. Add about ⅙ of the sweet potatoes and beef, then drizzle the bowl with hot honey, sprinkle with green onions, and serve.

Notes

  • If you don’t like cottage cheese, swap in my chipotle yogurt sauce instead.
  • Keep an eye on the cook time – if you cook the sweet potatoes too long, you could end up with mashed potatoes.
  • The avocado and green onions are optional, but add a really nice balance of flavors & textures.
