The Easy Pickle Chicken Salad You Didn’t Know You Needed
Let me start by saying this rotisserie chicken salad has no business being this good. It literally takes just a few minutes to throw together, and the unexpected punchy, flavorful combo of pickles + chicken works ridiculously well together.
Seriously, bring this to your next potluck and it’ll be the stand-out dish that everyone raves about! Bonus – this actually tastes better if you make it ahead of time, so it’s also perfect for a meal prep salad. Or turn it into a hearty dill pickle chicken sandwich with your favorite bread, buns, or (if you’re feeling fancy) croissants.
If you know me, you know I’m always looking for ways to simplify a delicious, low-effort meal, and this dill pickle chicken salad checks every box. I created it using rotisserie chicken (or my effortless slow cooker shredded chicken), loading it up with crunchy celery and red onion, and then tossing it all in a creamy, flavor-packed dressing; one that I first created for my dill pickle coleslaw (and that now I put it on everything).
Finally, to keep things light but satisfying, I use mostly Greek yogurt with just a little mayo for richness. And while I’m not even a full-on pickle girlie, even I find that this particular combo of chopped dill pickles, pickle juice, mustard, garlic, and dill is straight-up addictive. Just don’t blame me if you end up eating it straight out of the bowl!

Tips to Customize this Chicken Salad to Your Liking
- Mix it Up: This recipe is super versatile, so feel free to add more garlic if you’re a garlic-lover. My daughter always requests that I double the pickles since she can’t get enough of ‘em, so if that’s you, feel free to add as many pickles as you’d like!
- Sugar: In testing I found that just a teaspoon of sugar helps balance all the salty & savory flavors. I recommend adding it, but you can leave it out if you’d prefer.


Dill Pickle Chicken Salad (Quick & Easy!)
Ingredients
- 4 tablespoons low-fat plain Greek yogurt
- 2 tablespoons mayonnaise
- 3 tablespoons pickle juice
- 1 teaspoon yellow mustard
- 1 clove garlic, minced
- 1/4 teaspoon kosher salt
- 1 teaspoon sugar
- 2 teaspoons dried dill (or 2 tablespoons fresh dill)
- 1 cup celery, small diced
- 1 cup dill pickles, small diced
- 3 tablespoons red onion, small diced
- 3 cups cooked shredded chicken (such as from a rotisserie chicken)
Instructions
- In a large bowl, whisk together the Greek yogurt, mayonnaise, pickle juice, mustard, garlic, salt, sugar and dill until smooth.
- Add the celery, dill pickles, red onion, and chicken, stirring to combine.
- Taste and adjust seasonings. Serve immediately, or cover and chill for at least 30 minutes for the flavors to combine.
Notes
- Chicken: In testing I found that a heartier, chunkier shred on the chicken kept a nice contrast between tender chicken and crunchy pickles, which I personally preferred, however shredded chicken also works well.
