An Easy Butternut Squash and Kale Fall Salad

This fall dense bean salad miiiiiiiiiiight just be the best thing I’ve made all season, and I say that as someone who makes a lot of salads. Roasted butternut squash, crisp apple, chopped kale, and two kinds of canned beans, all tossed in a maple Dijon dressing with feta and toasted pumpkin seeds on top.

It’s sweet and savory and crunchy and creamy all at once, which is exactly what a fall salad should be! I created this one to be super easy (as I do) so everything gets tossed together in one-bowl, it lasts in the fridge for 4-days, and tastes even better on day two, making it my go-to make-ahead lunch, an easy vegetarian dinner, and the thing I bring when someone asks me to bring a side, especially in the fall.

It’s really the cold weather answer to my dense bean salad, which everyone loves all summer long. In testing, I tried to skip massaging the kale, as it seemed fussy for a salad that sits in dressing anyway, so I figured a few hours in the fridge would do the same work. Nope. The kale stayed tough even overnight. So, the two minutes of firm massaging really does make a difference and I don’t recommend skipping it.

On that note, chop the kale finer than feels necessary, roughly bean-sized, so it distributes instead of clumping at the bottom of the bowl. This one’s naturally gluten-free, and for dairy-free, skip the feta and add another tablespoon of pumpkin seeds. And if this becomes part of your fall rotation, I highly recommend my lentil salad with chicken next!

Assorted ingredients including kale, butternut squash, apple, white beans, chickpeas, feta, pepitas, oil, vinegar, mustard, salt, and pepper arranged on a light surface.
Canned beans, butternut squash and kale make this a hearty and satisfying fall salad.

Robyn’s Testing Tips for this Healthy Fall Salad

  • Massage the kale in its own bowl with plain oil and salt, not in the dressing. I tried massaging it directly in the dressed salad and the kale soaked up nearly all of it, leaving the beans dry and bland with nothing to absorb!
  • I tested skipping the toasting on the pumpkin seeds and it’s not the same. Three minutes in a dry skillet is what gives them the crunch that holds up for days in the fridge. Or buy them pre-toasted to make things easier!
  • Add the feta and pumpkin seeds last and stir gently. I’ve tossed them in with everything else and the feta broke down into the dressing, which is less pretty and loses those distinct salty bites.

Equipment

Ingredients

For the Salad

  • 3 cups butternut squash, peeled and cut into ½-inch cubes (about half a medium squash)
  • 2 teaspoons olive oil, divided
  • ½ teaspoon kosher salt, divided
  • ¼ teaspoon black pepper, divided
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 3 cups Lacinato (dinosaur) kale, stems removed and finely chopped (1 bunch or roughly 7-10 leaves of kale)
  • 1 medium sweet crisp apple, cored and diced
  • ½ cup crumbled feta cheese
  • ¼ cup toasted pumpkin seeds

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat and Prep: Preheat the oven to 400°F and line a sheet pan with parchment paper or spray with cooking spray.
  • Roast the Squash: Toss the butternut squash with 1 teaspoon of the olive oil, ¼ teaspoon of the salt, and ⅛ teaspoon of the pepper on the prepared sheet pan.
  • Spread in a single layer and roast for 22-25 minutes, flipping once halfway through, until golden and tender. Set aside to cool slightly.
  • Make the Dressing: While the squash roasts, in a large bowl (the same bowl you’ll make the salad in) whisk together 3 tablespoons olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon maple syrup, 1 teaspoon Dijon mustard, ½ teaspoon salt, and ¼ teaspoon pepper in a small bowl until smooth.
  • Add the drained and rinsed chickpeas and white beans to the dressing, stirring to combine. Allow to sit while you prepare the kale.
  • Massage the Kale: Place the chopped kale in a separate large bowl. Drizzle with 1 teaspoon of olive oil and ¼ teaspoon of salt and massage firmly with your hands for 1-2 minutes until the kale softens and darkens slightly.
  • Tip: This makes the kale tender and far more pleasant to eat, so don’t skip this step.
  • Assemble: Add the roasted squash, diced apple, and massaged kale to the bowl with the beans and dressing. Toss well to combine and coat everything evenly.
  • Add the crumbled feta and pumpkin seeds, and stir until just combined.
  • Serve: Serve immediately or refrigerate for up to 4 days. This salad actually gets better as it sits and the flavors meld, so a few hours in the fridge is a great idea if you have the time.

Notes

  • I find this salad makes 4 servings as a main dish, or 6-8 as a side.
