An Easy Chicken Salad with No Mayo and No Dairy
Allow me to introduce you to the quick chicken apple salad I could happily eat on repeat, which I created using a quick vinaigrette instead of mayo or dairy, making it bright, tangy and allowing the dressing to cling to everything instead of smothering it.
Now, even though we’re departing from the classic mayo-heavy chicken salad here, everything else is reassuringly familiar, with chicken and plenty of celery for crunch, plus chopped sweet-crisp apple and salted cashews for even more flavor and texture.
The other reason I make it constantly is that it only takes about 15-minutes and nothing has to be cooked. You just whisk the vinaigrette right in the bowl, throw everything in, and bam, you’ve got yourself the perfect simple chicken salad.
I love serving this one piled on greens, scooped with crackers (highly recommend), tucked into a wrap or lettuce cups, or made into a sandwich. It’s sturdy enough for all of it and doesn’t turn bread soggy the way mayo-based chicken can.
On that note, I’m kinda the queen of chicken salad, so if you want a more classic version, my chicken salad with cranberries and walnuts is the one to make, and my chicken salad with grapes is always a hit!

Make This Apple Chicken Salad When:
- You need a packable lunch that doesn’t need reheating. It holds up to 4-days in the fridge and tastes better on day two.
- You’re feeding someone with dietary restrictions because it’s naturally dairy-free and gluten-free so it’s the bowl you can set out at a potluck or shower without a list of caveats attached.
- You want a high-protein lunch that isn’t heavy because the vinaigrette in place of mayo means it doesn’t sit like a brick for the rest of the afternoon.
- When you have a rotisserie chicken to use up. One bird gets you the 3-cups you need, and this is my favorite thing to do with the leftovers.

Robyn’s Testing Tips for a Chicken Salad without Mayo
- I definitely recommend using whole grain mustard, not Dijon or yellow. I’ve made it with both and the whole grain version gives you those little mustard seeds that pop against the apple, which is half the texture of this salad.
- Chop the apple, celery, and chicken to roughly the same size. I got sloppy with this once and ended up with bites that were all celery and bites that were all chicken, and it matters more here than in a mayo-based salad where everything binds together.
- I like to leave the apple peels on, since it saves time, plus you lose the color the peel lends.
- Use roasted salted cashews, not raw or unsalted. The salt is doing real work against the vinaigrette, and I tested raw cashews once and they tasted flat and a little chalky in the bowl.
- Be sure to let the shallot sit in the vinaigrette while you chop everything else. I tested adding it raw at the end and it came through harsh enough to bully the rest of the bowl, where ten minutes in the vinegar mellows it completely.
- Don’t skip the teaspoon of honey, even though it seems like nothing. I tested the dressing without it and it came out sharp in a way that made the whole salad taste unfinished.

Chicken Apple Salad (without Mayo)
Equipment
Ingredients
For the Dressing
- 1 tablespoon whole grain mustard
- 1 teaspoon honey
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 3 tablespoons white wine vinegar
- 4 tablespoons extra virgin olive oil
- 1 small shallot, minced
For the Chicken Salad
- 2 cups sweet-crisp apple, chopped (from about 2 medium apples)
- 2 cups celery, chopped (from about 4-6 medium stalks)
- 3 cups cooked chicken, chopped (such as from a rotisserie chicken)
- ¼ cup roasted salted cashews, chopped
Instructions
- Make the Dressing: In a large bowl (the same bowl you’ll use to make the salad), whisk together the mustard, honey, salt, pepper, vinegar, and olive oil until well combined.
- Marinate the Shallot: Add the shallot and allow to marinate while you chop the apples, veggies, and chicken.
- Prepare the Salad: Add the apple, celery, chicken, and cashews, stirring to combine. Serve right away, or refrigerate for up to 4 days.
Notes
- Optional Honey: Omit the honey for a Whole30 friendly option.

I just made this and like always, SO delicious!
So happy you enjoyed, Meara!
This is not a "Whole 30" recipe… it has honey.
Andrew, the honey is optional. Feel free to omit it.
Hi Robyn,
This looks good. We are going to a potluck where the daughter can’t have anything dairy, and this looks and sounds perfect. Thank you for this!
ps.
Graes, yay, hope this is a hit at the potluck and with your daughter. Thanks for the catch on the typo! 🙂
Hi Jeff, I don’t have the nutritional values, sorry about that. Hope you enjoy this one!
Fantastic recipe! I added dried cranberries, cut the amount of oil in half, and used chicken tenders that I baked in the oven, and it was a hit – everyone wanted the recipe!
Katie, yay, I’m so glad you enjoyed this one! Love the addition of dried cranberries. 🙂
Thanks for the great recipe! I had leftover chicken breasts that I needed to do something with. I like chicken salad, but don’t care for mayo and don’t have any in the house. I made this a couple of hours before eating and it is delicious! There were some ingredients I didn’t have (shallots, celery) and some I chose to leave out (honey) and some I found substitutes for (no white wine viniegar, but did have a lime in the refrigerator). Again, thanks! This recipe is a keeper!
Yay, so glad you enjoyed this one and that you adapted it to make it your own!
Another winner salad recipe, thank you Robyn! Made this to have for my lunches last week and I looked forward to lunch each day! Great crunch and the flavor and texture of the dressing was perfect!
Yay, Stephanie, so happy to hear you enjoyed this one–it’s a classic around here! Cheers!
I had a romaine/spinach salad w/olives, feta, mushrooms, zucchini, celery, carrots, green pepper and broccoli left over along with a rotisserie chicken- I added more spinach and made the dressing with seasoned rice vinegar (deleted honey) and added cracked pepper and it was AMA🎶ING!!!!
Yay, so glad you enjoyed this one, Kelly. thanks so much for leaving a review!
This looks perfect to take to a gf, dairy free family. My question is about the apples. Will they turn brown if I make the night before? Thanks!
Hi Julie, since there’s acid in the dressing from the vinegar I’ve found that the apples don’t turn brown, as long as everything is well mixed and then sealed in an airtight container overnight in the fridge. Hope that helps!
Sounds so good with all those crunchy textures! I can’t wait to try it.
Yay, I hope you enjoy this one, Lisa! We love the crunch factor around here!
