One-Bowl Monster Cookie Dough Bites are easy to make and the perfect sweet treat. They’re made with real food ingredients, and are egg-free, but they taste just like cookie dough!
Allow me introduce you to my favorite new sweet treat: Monster Cookie Dough Bites. Let me tell you guys, these taste so much like actual cookie dough, but they’re made of real food ingredients, are naturally sweetened with maple syrup, and contain no egg so they’re safe to eat raw.
I’ve actually been making a version of these using a recipe from Angel Linddon’s The Oh She Glows Cookbook (which, by the way, is amazing and definitely worth adding to your collection). The first time I made her version I became obsessed with both how easy they were to make and how much they really tasted like cookie dough.
Over time I’ve made my own adjustments to the recipe, and recently I’ve been turning them into monster cookie dough bites by adding all kinds of fun mix-ins. Adding the mix-ins is especially fun if you have children in your house, because they can pick their favorites and join in the mixing and rolling process.
Because a batch is so easy to whip up, I’ve taken to making them for friends and family during the holidays and for special occasions. I’m telling you, gift someone with a batch of these and they will be your friend for life!
I recently made a batch for one of my favorite people (and favorite barre3 instructors) in the world, Allison Beam (barre3 online subscribers will recognize Allison from some of the videos).
Allison is just one of those ultra-positive people who shine so much light into the world, and since she was celebrating her 4-year barre3 teaching anniversary I brought her a batch of these to celebrate.
Alison also happens to be expecting her fourth baby later this year, so she was especially pleased to receive cookie dough that she could feel good about eating.
So good, in fact, that she teased the entire class with her prized jar of cookie dough bites for our entire one-hour workout. She really is the sweetest person, but I guess one should just not get between a woman and her cookie dough.
I should note that these sweet treats are made with peanut butter. I don’t often use peanut butter in the recipes I share here because I know they are an allergy issue for many.
You can absolutely skip the peanut butter and make these with nut or seed butter alternatives such as almond butter, sunflower seed butter, or tahini. If you’re sending these in a lunchbox to a nut-free school or classroom, be sure to use one of the alternatives.
I’m telling you, these are so dang delicious that you’ll want to make them again and again. I’ll admit to hiding a few in the back of the fridge so that Andrew and Elle won’t eat them all before I get any. They’re really that good. Now, let’s make some cookie dough bites!
RECIPE & KID-FRIENDLY ADAPTATIONS
1 | If you don’t do peanut butter, swap in any nut or seed butter you like. I’ve tried these with almond butter, sunflower seed butter, and tahini, and all are great options.
2 | Use whatever mix-ins to customize the monster cookie dough bites. Anything goes, so use what you like and what you have.
3 | This easy one-bowl recipe is a great one to make with kids. They can stir the mixture together, select the add-ins, and help roll the bites into balls.
4 | Almond flour can be used in place of the oat flour for a paleo version.
THIS RECIPE IS . . .
Naturally Gluten-Free, Dairy-Free, Naturally Sweetened, Egg-Free, Vegetarian, and Vegan
One-Bowl Monster Cookie Dough Bites (Naturally Sweetened)
- ⅓ cup melted coconut oil
- ¼ cup melted peanut butter or any nut or seed butter
- ¼ cup pure maple syrup
- 1 teaspoon pure vanilla extract
- ¼ teaspoon kosher salt
- 2 cups oat flour*
- 10 tablespoons mix-ins chopped raisins, chopped salted peanuts, flaked unsweetened coconut, roasted salted sunflower seeds, dark chocolate chips, whole rolled oats
- In a large bowl, stir together the coconut oil, peanut butter, maple syrup, and vanilla extract until smooth.
- Add the salt and oat flour, stirring again until well combined, then add the mix-ins and stir until well incorporated.
- Using a cookie scoop or 1 tablespoon measure, scoop the mixture into your hands and roll gently into balls.
- Refrigerate for 30 minutes. Store, tightly covered in the fridge for up to one week.
