My Favorite Fresh Green Bean Salad with a Honey Dijon Dressing
Okay, three bean salad is one of those nostalgic potluck dishes I loved growing up, but I always found the classic version a little too sweet and the green beans a little too soft, so this is my fresh take on the classic. I swap the usual mushy canned green beans for crisp fresh ones, and I scale waaaaaaay back on the sugar, using just enough honey to balance the tangy red wine vinegar. The result is bright, crunchy, and a little less cloying, but still has that sweet-and-sour flavor that makes three bean salad so good!
The green beans are where my version really stands apart, so it’s worth a quick blanch. Two minutes in boiling water followed by an ice bath keeps them vibrant green and crisp-tender instead of dull and limp. Don’t skip the ice bath, since it stops the cooking instantly and locks in that fresh snap! Beyond that, this is such an easy salad, since you whisk the dressing right in the bowl, add everything else, and toss.
One thing to keep in mind is this salad needs time to marinate (ditto my edamame dense bean salad, which you should definitely try next)! Give it at least 30-minutes before serving so the beans really soak up the dressing and the flavors meld, though a few hours in the fridge is even better. That make-ahead quality is exactly what makes it such a great potluck and barbecue side! Serve it alongside my slow cooker bbq chicken thighs for an easy cookout plate. Yum!

Robyn’s Testing Tips for Fresh Three Bean Salad
- Make sure to drain and rinse the canned kidney beans and chickpeas well so they are ready to soak up all the yummy dressing.
- I recommend slicing the red onion as thinly as you can so it doesn’t overpower the other ingredients.
- Don’t feel locked into these three beans; I’ve swapped in cannellini, wax beans, and even black beans, and as long as you keep a mix of colors and textures, it works beautifully.

Ingredients
For the Dressing
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
For the Salad
- 12 ounces fresh green beans, trimmed and cut into 1-inch pieces (about 2½ cups)
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can chickpeas, drained and rinsed
- ¼ medium red onion, thinly sliced
- ¼ cup fresh parsley, roughly chopped

Instructions
- Blanch the Green Beans: Bring a large pot of salted water to a boil and set a bowl of ice water nearby.
- Add the green beans and cook for 2 minutes until crisp-tender and bright green. Drain very well and transfer to the ice water to stop the cooking.
- Make the Dressing: In a large bowl (the same one you’ll make the salad in), whisk together the olive oil, red wine vinegar, honey, Dijon mustard, garlic, salt, and pepper until well combined.
- Assemble: Add the green beans, kidney beans, chickpeas, red onion, and parsley to the bowl with the dressing. Toss well to coat everything evenly.
- Marinate and Serve: Let the salad sit for at least 30 minutes before serving, as the beans absorb the dressing and the flavors meld significantly.
- Taste for seasoning and adjust with salt, pepper, or a splash more vinegar as needed. Serve cold or at room temperature.
Notes
- Taste and adjust the dressing right before serving, since I find the beans soak up seasoning as they sit and almost always need another pinch of salt or a splash of vinegar to brighten back up.
- When I make this for a potluck, I assemble it a day ahead since it keeps for up to 4 days and travels well, then give it a quick toss right before serving.
- I tested this with frozen-defrosted green beans and it worked beautifully, so give that a try if you want a shortcut!
