This quick and easy chipotle honey vinaigretteis so simple and will elevate anything from a salad, chicken, and burrito bowls. Made with honey, chipotles in adobo, lime juice and oil, it’s a take on Chipotle's famous dressing and delicious on just about everything!
2tspminced chipotle peppers, from a can of chipotles in adobo
2tbsphoney
1/4cupfresh lime juice
1/3cupavocado oil
freshly ground pepper, to taste
Instructions
With the bottom of a glass jar or side of a knife, lightly crush the garlic clove.
To a 8-oz mason jar, add the crushed garlic clove, salt, chipotle, and honey, using a fork or small whisk to combine.
Add the lime juice, add the lid, and shake vigorously until the salt has dissolved and all the ingredients are combined.
Add the avocado oil and pepper, add the lid, and shake vigorously until the vinaigrette has emulsified. Taste and add additional salt or pepper if desired.
Store, refrigerated, for up to 5 days. To use, allow to come to room temperature, and shake well to recombine.
Notes
This dressing recipe makes about ⅔ cup, with a serving size of one tablespoon this should get you at least 10 servings.
For a stronger garlic flavor, grate or finely mince the garlic and add in step 2.
Use maple syrup for a vegan option.
Omit honey or maple syrup for a Whole30 option.
Red wine vinegar can be used in place of the lime juice.
