These Honey Orange Dijon Chicken Skewers are delicious in bowls, fresh salads or served as wraps - perfect for meal prep or easy dinners on busy weeks. The easy marinade combines citrus, sage, honey and dijon mustard & doubles as a sauce to drizzle on the chicken when it's hot off the grill!
1/4cupfresh squeezed orange juice (from about 1 medium orange)
1/4cupolive oil
1/2tspkosher salt
1/4tspfreshly ground pepper
1tbspminced fresh sage
For the Honey Orange Dijon Chicken Skewers
610-inchbamboo skewers presoaked
2lbsboneless, skinless chicken thighs excess fat trimmed, and cut into 1-inch chunks
Instructions
In a medium bowl or mason jar, combine the mustard, honey, orange juice, olive oil, salt, pepper and sage, whisking or shaking until well combined.
Place the cubed chicken in a bowl. Add half the sauce and marinade for at least an hour, or all day in the refrigerator, covered.
Remove the chicken from the marinade, shaking off any excess. Thread onto bamboo skewers. Discard extra marinade.
Preheat the grill to medium-high heat (about 400F). When the grill is hot, place the skewers on the grill and cook for 7-8 minutes, flipping halfway, until the chicken is cooked through and grill marks have formed.
Serve with remaining sauce, atop rice, and slaw if you prefer.
Notes
Rosemary would work in place of sage
Chicken breasts work in place of thighs, though will be drier
