This easy italian chicken zucchini skillet combines chicken, zucchini, tomatoes and classic Italian flavors for an easy, one-pot dinner you can make any night of the week.

STEP 1:

Season the chicken and brown them on both sides in a skillet at medium-high heat. Set aside.

STEP 2:

Turn the heat down to medium, add remaining oil along with the zucchini. Add salt, and cook for 5 minutes. Add garlic.

STEP 3:

Add chicken stock, stirring to deglaze, then add tomato paste and diced tomatoes, stirring until well combined.

STEP 4:

Add the chicken back to the pan and simmer. Finish with butter and season to taste.

– Add mushrooms along with the zucchini for more variety – Yellow squash also works in place of the zucchini in this dish – Use dairy-free butter to keep this recipe dairy-free, or omit for Whole30
