Simple and hearty, this crockpot hamburger soup is loaded with vegetables & ground beef. Simmer all day in the slow cooker or make in 35 minutes on the stovetop!

ingredients:

yellow onion olive oil lean ground beef celery carrots red bell pepper yellow bell pepper waxy yellow potatoes canned tomato paste granulated garlic powder no-salt Italian seasoning kosher salt chicken or beef stock water red wine vinegar

STEP 1:

Heat olive oil in a skillet pan over medium heat. Add the onion & cook for 3-4 minutes, stirring occasionally.

Add the ground beef, sprinkle salt, and cook until browned & no longer pink. Drain any excess grease.

STEP 3:

Add the cooked onion & beef, celery, carrots, bell pepper, potatoes, tomato paste, seasonings, salt, stock & water to a 6-quart slow cooker. Stir until well combined.

STEP 4:

Cover and cook on high for 4-5 hours (or on low for 7-8 hours) until the vegetables are tender and cooked through.

Uncover & add the red wine vinegar, stirring to combine. Taste & add additional salt, vinegar or pepper to taste. Serve with your toppings of choice!
