In a medium saucepan or microwave-safe bowl, whisk together the almond milk, coconut milk, maple syrup, cocoa powder, and ¼ teaspoon peppermint extract until very well combined. Taste and add an additional ¼ teaspoon extract if you want a stronger peppermint flavor.
Gently heat the mixture, stirring occasionally, until warmed to your desired temperature.
