One-Bowl Monster Cookie Dough Bites (Naturally Sweetened)

One-Bowl Monster Cookie Dough Bites are easy to make and the perfect sweet treat. They're made with real food ingredients and are egg-free, but they taste just like cookie dough!

Ingredients

  • cup melted coconut oil
  • ¼ cup melted peanut butter or any nut or seed butter
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • 2 cups oat flour*
  • 10 tablespoons mix-ins chopped raisins, chopped salted peanuts, flaked unsweetened coconut, roasted salted sunflower seeds, dark chocolate chips, whole rolled oats

Instructions

  • In a large bowl, stir together the coconut oil, peanut butter, maple syrup, and vanilla extract until smooth.
  • Add the salt and oat flour, stirring again until well combined, then add the mix-ins and stir until well incorporated.
  • Using a cookie scoop or 1 tablespoon measure, scoop the mixture into your hands and roll gently into balls.
  • Refrigerate for 30 minutes. Store, tightly covered in the fridge for up to one week.

Notes

*Make your own oat flour for this recipe by placing 2 cups whole oats in a blender and blending until a coarse flour forms. Alternatively, you can buy pre-made oat flour at well-stocked grocery stores and online (either regular or gluten-free). Be sure to buy gluten-free oats if you want to keep the recipe gluten-free.
If you don't do peanut butter, swap in any nut or seed butter you like. I've tried these with almond butter, sunflower seed butter, and tahini, and all are great options.
Use whatever mix-ins to customize the monster cookie dough bites. Anything goes, so use what you like and what you have.
This easy one-bowl recipe is a great one to make with kids. They can stir the mixture together, select the add-ins, and help roll the bites into balls.
Almond flour can be used in place of the oat flour for a paleo version.
