1small medium Napa or green cabbagesliced into thin shreds (about 4 cups)
1tablespoonapple cider vinegar
In a medium bowl combine the apples, scallion, cabbage, olive oil, apple cider vinegar, and ¼ teaspoons salt. Allow to sit for at least 5 minutes for the flavors to combine and the cabbage to wilt, then serve.
Use pre-bagged slaw mix in place of the cabbage if you're short on time.Store the Quick Apple Slaw, separately, for up to 3 days. Drain off any extra liquid prior to serving.
