Hidden Greens Flourless Chocolate Protein Muffins

This recipes comes from Taesha Butler of The Natural Nurturer. Loaded with protein, healthy fat and amazing greens, these muffins are going to be a delicious game changer when it comes to serving veggies at breakfast….or snack….or lunch…or whenever you please!
Servings 12 muffins

Ingredients

  • 1 large handful baby spinach
  • 1/4 cup maple syrup
  • 4 eggs
  • 3/4 cup nut butter or sunflower seed butter or tahini for a nut free option*
  • 1/2 cup cacao powder
  • 1 large very ripe banana
  • 1/2 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 1/2 tablespoon pure vanilla extract

Instructions

  • Preheat your oven to 350F and line a 12-hole muffin tin.
  • Combine all ingredients in your food processor. Run until smooth. Scrape down the sides of the food processor if needed and run to ensure that all ingredients are incorporated.
  • Using a 1/4 measuring cup, portion out the batter between the 12 lined muffin tin holes.
  • Bake for 15-18 minutes or until a toothpick inserted in the middle of the muffin comes out clean and the top of the muffins is slightly golden brown.
  • Let cool for 30 minutes and enjoy

Notes

*Sometimes people with nut allergies are also allergic to sesame seeds (the base for tahini). If serving to an individual with a nut allergy, please check that they are also not allergic to sesame seeds before using that substitution.
