This quick and easy tomato cream sauce is one of my favorite last-minute or Valentines Day dinners!  Canned tomatoes and tomato paste combine with a splash of coconut milk to create the most satisfying, comforting pasta sauce.

STEP 1:

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion & salt. Cook for 5-8 minutes, until very soft and slightly browned, stirring frequently.

Add the garlic and garlic powder, stirring constantly over medium heat for about 30 seconds, until lightly browned.

STEP 3:

Add the crushed tomatoes, tomato paste, and salt, stirring to combine. Simmer over medium-low heat for 10 minutes.

Finally, add the coconut milk, and salt, stirring to combine. Taste and add additional salt or red pepper flakes if desired!

fun ways to serve this sauce:

Serve with gluten-free or whole wheat pasta. It’s also delicious as a sauce for chicken or fish. If you like things spicy, you can add a sprinkle of red pepper flakes. If you want to make it feel extra special you can garnish with fresh chopped parsley and basil, or even Parmesan on top!
