This nourishing stuffed pepper casserole is comforting and so refreshing! A whole meal in one pot, it’s got hearty ground beef, melty cheese, loads of veggies, just enough rice, and no canned soup. It comes together in less than 40 minutes on the stove!

STEP 1:

Saute onions and peppers.

STEP 2:

Add ground beef and cook.

STEP 3:

Add garlic, tomato paste, smoked paprika, stock, Worcestershire sauce, and rice; cover & cook.

Uncover and fluff rice.

Add cheese and cover to let it melt.

Sprinkle with parsley and serve.
