This squash casserole features tender zucchini and pre-cooked chicken in a creamy sauce (no canned soup here) all topped off with toasty, garlicky bread crumbs. Yum! It’s a fresh and craveable one-pan meal that’s easy to make, and even better, make ahead!

STEP 1:

Salt zucchini & allow liquid to drain.

Add zucchini to baking dish & pat dry.

I highly recommend topping the finished casserole with a shower of fresh basil and serving alongside a simple green salad with pesto vinaigrette, but it’s so good on its own too!
