This easy, split pea soup comes together in the crockpot or stovetop & is made with simple pantry ingredients. It's the perfect use for any leftover holiday ham (or a ham bone)!

ingredients:

split peas onion celery carrot garlic bay leaves smoked paprika salt water vegetable stock  (or chicken broth) 1 ham bone -or-  2 cups diced ham

STEP 1:

Add the split peas, onion, celery, carrot, garlic, bay leaves, salt, broth, water and the ham (or ham bone) to a 6-quart slow cooker. Then stir to combine.

STEP 2:

Cover and cook on high for 5-6 hours or low for 7-8 hours. Do not remove the lid during the cooking time.

STEP 3:

Uncover, add the red wine vinegar, and stir to combine. Remove the ham bone (if using) and discard.

STEP 4:

Taste and add additional salt or vinegar if desired. Serve with toppings of your choice (fresh parsley, black pepper, hot sauce or crusty bread)!

cooking tip:

This soup thickens quite a bit as it cools, So if you want a slightly thicker consistency, allow it to cool for 30+ min before serving!
