This easy slow cooker lentil soup is made with simple pantry ingredients like green lentils, celery, carrot and makes a wonderfully filling and hearty vegetarian dump and go slow cooker meal!

STEP 1:

Add the onion, celery, carrot, garlic, salt, lentils, tomatoes, stock and bay leaf to a slow cooker, stirring to combine.

Cover and cook on high for 4-6 hours or on low for 6-8 hours, or until the veggies and lentils are soft.

STEP 3:

Add the vinegar and an additional stock if necessary. Using an immersion blender, blend for 5-10 seconds.

Add the spinach, and stir to combine. Serve with a generous drizzle of olive oil, and any other toppings you like.
