Slow cooker satay chicken is a flavorful, versatile dish the whole family will love! With a short list of ingredients, this delicious dish is not only quick to prepare but also a great meal prep option, making it a perfect addition to any meal rotation.

Sprinkle the salt over the chicken. Combine the coconut milk, curry paste, peanut butter, sugar, lime juice, and tamari.

Coat the chicken with half of the marinade. Place in the slow cooker and cook.

Drain the excess liquid and add half of the remaining sauce.

Optional: Place the cooked and sauce-coated chicken on a broiler safe pan and broil for 3-5 minutes on each side.

Serve with the remaining satay sauce on the side for dipping. Garnish with cilantro, fresh lime slices, and peanuts if desired.
