This easy slow cooker butternut squash soup is so cozy & delicious. Plus it's an easy chop-and-drop recipe, so you can throw everything into your slow cooker & just let it work its magic!

ingredients:

onion carrot apple butternut squash garlic kosher salt turmeric cinnamon vegetable stock coconut milk or cream apple cider vinegar

STEP 1:

Add the onion, carrot, apple, butternut squash, garlic, salt, turmeric, cinnamon and vegetable stock to a 6-quart slow cooker.

STEP 2:

Cover and cook on high for 4-5 hours or on low for 6-7 hours (until the vegetables are very tender).

STEP 3:

Uncover & add coconut milk.

STEP 4:

Using an immersion blender, blend until very smooth. Alternatively, working in batches, carefully ladle the soup into a blender and blend on high until smooth.

STEP 5:

Add the apple cider vinegar, stirring to combine. Taste and add additional salt if desired. Serve with any toppings you like.

modifications:

The consistency of this soup is very traditional for a butternut squash soup.  If you prefer something thicker, though, you can always add 1-2 peeled and chopped potatoes for an extra hearty soup!
