This easy, feel-good Mexican casserole recipe is packed with tender juicy chicken, colorful fajita veggies, and layers of corn tortillas, all bathed in lightly creamy and smoky enchilada sauce and topped with a sprinkle of gooey cheese.

STEP 1:

Slice the vegetables and chicken.

Saute chicken with spices & remove from pan. Saute vegetables then add the chicken back to the pan.

Add enchilada sauce, cream cheese, and beans.

Evenly spread 1/2 cup enchilada sauce in a baking dish.

Layer chicken mixture with tortillas and top with remaining enchilada sauce & cheese. Bake.
