This vibrant macaroni salad is made without mayo and uses tender elbow macaroni pasta, a rainbow of colorful crunchy veggies, and a simple, zesty homemade Italian dressing for a perfectly light and flavorful pasta salad. I love that I can make this one ahead of time, too!

Combine pasta and veggies. Mix in dressing.

Let sit 30 minutes and serve.

Add one can of drained tuna for a healthy tuna macaroni salad, 1 cup cooked and chopped chicken for a chicken macaroni salad, 1 cup of chopped hard boiled eggs for a vegetarian macaroni salad, or 1 can of drained & rinsed chickpeas for a vegan macaroni salad.
