Made with carrots, celery, onions and potatoes, this comforting crockpot turkey soup is so easy to prepare in the crockpot, stovetop or instant pot. The perfect way to stretch leftover turkey meat into extra meals!

ingredients:

yellow onion carrot celery yellow waxy potato cooked turkey kosher salt granulated garlic powder Italian/ poultry seasoning bay leaf chicken stock water filtered coconut milk/ heavy cream

STEP 1:

In a 6-quart slow cooker, add the onion, carrot, celery, potato, turkey & all your seasonings.

STEP 2:

Add the stock & water and stir to combine. Cover & cook on high for 4-5 hours (or low for 6-7 hours) until the vegetables are very tender.

STEP 3:

Uncover, add the coconut milk (or cream) & stir to combine. Remove the bay leaf and discard.

STEP 4:

Taste and add additional salt if desired. Serve with chopped fresh parsley or crusty bread for dipping.

Add 1 cup cooked rice, barley or cooked pasta, stirring to combine.  Allow to sit for 5 minutes with the heat off before serving for the flavors to absorb.
