These marinated grilled vegetables are a delicious and easy way to add more color to your plate! Whether grilled or roasted in the oven, these flavor-packed veggies make a show-stopping side dish and are even better made in advance.

Reserve 3 tablespoons of marinade.

Grill vegetables & drizzle with marinade.

Here are a few of my faves: – As a BBQ side dish  – Chop into smaller pieces & add to scrambled eggs – Layer into a sandwich with balsamic marinated chicken – Add to red pesto pasta or pasta with homemade marinara sauce  – Add on top of salads and use the reserved marinade as a dressing
