raw unsalted cashews
canned crushed or diced tomatoes
For a nut-free version use this in place of cashews:
heavy cream -or- full-fat coconut milk from a can
Make it a soup & salad night by adding some leafy greens on the side tossed in your favorite dressing.
Serve with a grilled cheese sandwich or warm crusty bread on the side for dipping.
Garnish with cheese, fresh basil or a drizzle of olive oil on top before serving.
