easy pomegranate vinaigrette recipe

This pomegranate vinaigrette recipe is tangy, sweet and refreshing addition to any simple green salad and doubles as a delicious chicken marinade. The best part about this easy, healthy salad dressing is that it comes together in just a mason jar!

STEP 1:

With the bottom of a glass jar or side of a knife, lightly crush the garlic clove.

To a 8-oz mason jar, add the crushed garlic, pomegranate juice, honey, mustard, salt, and vinegar.

STEP 3:

Add the lid and shake vigorously until the salt has dissolved and all the ingredients are combined.

STEP 4:

Add the olive oil, add the lid, and shake vigorously until the vinaigrette has emulsified. Taste and add additional salt or honey if desired.

STEP 5:

Store, refrigerated, for up to 5 days. To use, allow to come to room temperature, and shake well to recombine.

For a stronger garlic flavor, grate or finely mince the garlic & add in step 2. In place of the red wine vinegar, you can use apple cider vinegar. In place of honey, you can use pomegranate molasses. For a vegan option, use maple syrup. For a whole30 friendly version, omit the sweetener entirely.
