This easy Crockpot Sweet Potato Soup with apple & turmeric Soup is a simple chop and drop recipe. It’s a hit with the entire family, plus it's vegan & vegetarian!

ingredients:

yellow onion garlic  sweet potatoes  russet potatoes apples kosher salt  turmeric vegetable stock  apple cider vinegar canned coconut milk ground black pepper

STEP 1:

Add the onion, garlic, sweet potatoes, russet potatoes, apples, salt, turmeric & stock to a 6-quart slow cooker, stirring to combine.

STEP 2:

Cover and cook on high for 3-4 hours (or on low for 5-6 hours) until the vegetables are very tender.

Uncover and add the apple cider vinegar & coconut milk.

STEP 4:

Use an immersion blender to blend until very smooth. Or carefully ladle into a blender, blending in batches on high until smooth.

STEP 5:

Add additional salt or vinegar to taste. Then top with freshly ground black pepper just before serving!
