Skip the processed ranch packets and make your own to use in this easy, healthy crockpot ranch chicken breast & veggies dinner! It's so delicious and simple to throw together in the slow cooker.

ingredients:

ranch seasoning onion powder garlic powder dried dill salt for the chicken & veggies yellow waxy potato carrots chicken stock chicken breasts (or thighs) for the ranch dressing plain Greek yogurt (or non-dairy yogurt) avocado oil mayonnaise apple cider vinegar

STEP 1:

Make the Ranch Seasoning by stirring together the onion powder, garlic powder, dried dill and salt until well combined.

Place the potato & carrots in the base of a 6-quart slow cooker. Add chicken stock & some Ranch Seasoning, tossing to combine.

Add the chicken breasts, sprinkle with additional Ranch Seasoning and salt.

Cover and cook on high for 3 hours or low for 6 hours (until the chicken is just cooked through).

Meanwhile, make the Ranch Dressing by whisking together the yogurt, mayo, apple cider vinegar & some Ranch Seasoning. Taste and adjust seasonings if desired.

STEP 6:

Remove the chicken and veggies from the slow cooker. Slice the chicken and serve with the veggies and sauce on the side for drizzling or dipping.

modifications:

The chicken and veggies will have a very, very mild ranch flavor after cooking.  To boost the ranch flavor, drizzle the Ranch Dressing on top or serve alongside for dipping.
