This slow cooker chicken, kale, and sweet potato soup is packed with protein & veggies and is so easy to make with a short list of simple ingredients. Hearty, filling, simple & nourishing!

ingredients:

sweet potatoes kale chicken stock Italian seasoning salt olive oil chicken breasts (or chicken thighs)

STEP 1:

Place all the ingredients in a 6-quart slow cooker, stirring to combine.

STEP 2:

Cover and cook on high for 4 hours or low for 6 hours (or until the sweet potatoes are tender and the chicken is cooked through and very tender).

STEP 3:

Remove the chicken and shred with two forks. Return to the slow cooker and stir to combine.

Taste and add additional salt to taste. Serve hot with a generous drizzle of olive oil.

modifications:

If you don't have or don't like sweet potatoes, you can use Yukon gold or waxy potatoes in their place. To use spinach instead of kale - cook the sweet potatoes and chicken per the recipe, then add the spinach during the last 5 minutes of cooking.
