Sweet, savory, and ultra nourishing, this carrot lentil soup incorporates fresh carrots, red lentils, ginger, and spices for a satisfying, flavorful one-pot meal. Easily made in either the slow cooker or stovetop!

STEP 1:

Heat the olive oil over medium heat. Add the ginger, garlic, cumin, chili flakes, and turmeric, and cook until fragrant.

Add the carrots, tomatoes, lentils, salt, and broth, stirring until well combined. Simmer until the carrots are soft and the lentils begin to soften and break apart.

Uncover and stir in the coconut milk, vinegar, and maple syrup, stirring to combine. Blend until just barely smooth.

Taste and add additional salt or vinegar if desired. Serve with whatever toppings you enjoy.
