ingredients:

sweet potatoes coconut milk shredded coconut chopped pecans maple syrup coconut oil apple cider cinnamon vanilla salt

STEP 1:

Preheat oven to 350 F. Add sweet potatoes to a large pot, cover with water & cook for 20-25 min

Drain sweet potatoes & mash together with coconut milk, apple cider, cinnamon, salt & vanilla

Make the topping. Mix together the coconut oil, coconut, maple syrup, pecans, cinnamon & salt

STEP 4:

Add mashed sweet potato mixture to a greased baking dish. Sprinkle an even layer of topping.

STEP 5:

Cover with foil & bake for 20 min, then uncover & bake for an additional 20-25 min.

Before serving, allow to cool for 5-10 minutes for the best texture & temperature!
