30+ Easy Fall Recipes: One Bowl Apple Cider Muffins
Ingredients
- ⅓ cup melted coconut oil, plus more for greasing
- 2 large eggs
- ⅔ cup unsweetened applesauce
- ⅓ cup pure maple syrup
- ¼ cup fresh-pressed apple cider
- 2 ⅓ cups almond or oat flour*
- 1 tablespoon cinnamon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt
- 1 cup finely chopped apple
- Cinnamon sugar for topping, optional

Instructions
- Heat the oven to 350F.
- In a large bowl, whisk together the coconut oil, eggs, applesauce, maple syrup, and cider.
- Add the flour, cinnamon, baking soda, baking powder and salt. Stir until well incorporated.
- Add the chopped apple, stirring until just combined.
- Fill each section of a 12-section greased or silicone lined muffin tin with roughly ¼ cup batter.
- Sprinkle with cinnamon sugar, if using, then bake for 15-20 minutes, or until the edges begin to pull away from the sides and a toothpick comes out clean.
- Allow to cool completely in the pan, then serve or store for later.

I literally am going to cook my way through these recipes. My kids are now both in college so we are officially empty nesters this year and I need some dinner inspiration. My husband and I are big fans of fall flavors so these are perfect ideas.
One question. I haven’t cooked with coconut milk. Does it give soups or recipes a coconut flavor? And also, do you stir it all together before you mix it in or do you take off the top layer?
Gina, yay, so fun to hear you’re going to cook through this list. Such a fun idea! Great question about coconut nut, milk too. Yes, give the can a good shake to mix the cream on top with the liquid before using it in a recipe (unless the recipe specifically calls for coconut cream). It it’s a very cold day, you might need to get in there and mix it yourself even after a good shake. For most of my savory recipes that use coconut milk in place of cream I find that the majority of people don’t notice the coconut flavor at all. If you your your fam is highly sensitive to the flavor they might detect it, so the choice is yours. You can sub heavy cream or half and half instead if you prefer. I hope you enjoy!
