This grapefruit and avocado salad with lemon-chive dressing is bursting with vibrant colors and bright, fresh flavors.

Every year I host Easter brunch for my family and friends. We look forward to the tradition all year as an opportunity to get together, celebrate, and eat a really good meal. I like to play around with the menu and try a few new recipes here and there, but there are some that always find their way onto our holiday table. This grapefruit and avocado salad with lemon-chive dressing is one. The vibrant colors look beautiful in a brunch spread, and the grapefruit and lemon dressing add a bright note that balances beautifully with the richness of avocado.

Of course you don’t have to save this salad for a holiday brunch. It makes a lovely side salad for any meal, and also works on its own as a main course. I like to add a bit of grilled salmon, shrimp, or cooked crab. White beans would also be a nice addition for a vegetarian option. Sometimes I use baby spinach instead of arugula, or substitute mint for the chives. The proportions for the salad and dressing also double well, so it’s great for feeding a crowd. It’s so versatile and delicious you really can’t go wrong. Simple, easy, and beautiful, you’re going to love this salad.

Avocado & Grapefruit Salad with Lemon Chive Dressing

With a short list of simple ingredients, gorgeous colors, and vibrant flavors, Avocado & Grapefruit Salad with Lemon Chive Dressing is easy to prepare and just the thing for lunch, dinner, or brunch!

Ingredients

  • 5 oz arugula, washed
  • 2 grapefruits, cut into segments
  • 2 large avocados, sliced
  • ¼ cup lemon juice
  • ¼ teaspoon salt
  • 1 teaspoon honey
  • ½ cup extra virgin olive oil
  • 2 tablespoons chopped chives

Instructions 

  • Divide arugula between 4 plates, topping with the grapefruit segments and avocado slices. Alternatively, place the arugula on a large platter, topping with the grapefruit and avocado.
  • Make the dressing by whisking the lemon juice, salt, and honey until well combined. Drizzle in the olive oil, whisking again until well incorporated. Add the chopped chives and whisk one more time.
  • Drizzle the dressing over the arugula, grapefruit, and avocado. Garnish with additional chives if desired.
